Have you ever met anyone who doesn’t like potatoes? Yeah, me neither. Potatoes are just so good. Whether they are fried, mashed, roasted, or boiled.
We truly accept and love them in every form (don’t you wish society could do the same with humans?)
This is one of my favorite ways to cook them because it is so easy and delicious! They are crispy on the outside, yet soft on the inside. It takes 5 minutes of prep!
You basically just wash them, cut them, throw a bunch of spices and herbs on them, and then you toss them in the oven and forget about them.
This recipe is also a lot better for you this way since you don’t need to use as much oil / butter.
Don’t let anyone fool you into thinking that carbs are bad for you! We need carbs to live a healthy life.



Crispy Roasted Potatoes
Ingredients
- 7 yukon gold potatoes, washed well
- 3 garlic cloves, chopped/ minced
- 2 tbsp olive oil
- sprinkle of garlic powder (optinal)
- 1/2 tsp paprika
- 1 handful fresh parsley, chopped
- 3 strands fresh rosemary
- salt and pepper to taste
Directions
- Preheat your oven to 400 degrees F.
- Cut your clean potatoes in half and then quarters.
- In a bowl/ baking tray, add the olive oil first and toss until they are evenly coated.
- Add the rest of the ingredients, leaving some fresh parsley aside for when they are done.
- Place them in the oven and rotate once or twice throughout baking for maximum crispyness.
- Enjoy!
Tips & Tricks: Always serve potatoes with dipping sauces! I personally love dipping them in ketchup because I am basic like that. But, you can get creative and make a homemade dipping sauce!
