I began testing out vegan Brownies recipes when I found out that my fiancè doesn’t like cakes. Luckily, he does love brownies! In my opinion, brownies should be fudgy and gooey, so it was important to me to get the texture just right.
This recipe does just that. It is the perfect texture!
So ditch the boxed brownies for a better, healthier, yummier version of brownies.
I love this one because it is so quick and easy! You throw all of the ingredients in one bowl and then pop it in the oven. Your house will be filled with the best chocolate smell ever!
I also just love it when my non-vegan friends are impressed with my recipes, this is definitely one of them. I use vegan butter for a buttery taste, but you can definitely switch that to coconut oil if you don’t have any on hand/ if you don’t want to use butter!

Best Vegan Brownies Recipe
Ingredients
- 1/2 cup unsalted vegan butter (such as earth balance)
- 4 unsweetened apple sauce “eggs” (1 cup)
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 tbsp pure vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 tsp salt
- 1 tsp baking powder
- 1 cup vegan chocolate chips/ vegan chocolate roughly chopped
Directions
- Preheat your oven to 350 degrees F (177 degrees c).
- Prepare a baking pan by brushing the bottoms and sides with butter and laying parchment paper on top. *If you use a 7 x 11 pan you will get 16 brownies, I used a 7 x 9 pan and got 12 thick brownies, the thicker brownies take longer to bake.*
- Melt the butter in a glass measuring cup.
- In a large bowl, whisk the butter with the sugars, add the apple sauce, and the vanilla extract and whisk again until well combined.
- Sautée for a couple of minutes, mixing well so it gets cooked evenly from all sides.
- To that same bowl, sift the flour and cocoa powder, add the baking soda and the salt, and mix using a spoon. Be careful not to over mix. .
- Add half of the chocolate chips and fold them into the batter.
- Pour the batter into the baking pan, smoothing out the top with a spoon and sprinkle the top with some chocolate chips.
- Bake for 30-50 minutes (depending on the pan you are using), or until a toothpick comes out with some crumbs on it. Do not over bake. The brownies will continue to set while they cool!
- Let the Brownies cool (for at least 15 minutes), and cut them into squares.
- Enjoy!
- To make cutting the squares easier, warm up the knife under hot water, and clean in between cuts.
- I love coconut, so I topped my brownies with some coconut flakes but feel free to add any topping you like!
- If you don’t have any applesauce, use flax eggs! For each flax egg all you need to do is mix 1 tbsp of flax with 3 tbsp of water and let it thicken.
