Vegan Buttery Green Beans Recipe

Ever wondered why veggies that you order at restaurants taste better than the ones you make at home?

I figured out it is because they put a lot of butter on them. Unfortunately, “normal” butter is full of cholesterol (31 mg per tbsp, in case you were wondering) so luckily for you, this recipe has none of that. It has a little bit of butter, but the good vegan kind, which means 0 cholesterol. You also don’t need a full stick of butter to make veggies taste amazing, a little goes a long way. Try this recipe out and see for yourself.

This recipe is similar to the way I make other veggies like my asparagus recipe, because if I like something that happens to also be good for me (yes garlic, I am talking about you), you better believe I am going to use it whenever and wherever I can.

I also really like adding chili flakes to almost everything, because I like it when my food has a slight kick to it, and it happens to be good for you, but if that doesn’t appeal to you, you can definitely skip that step.

Vegan Buttery Green Beans Recipe

  • Servings: 3-4

Ingredients

  • 1 bag green beans, trimmed and rinsed
  • 1-2 tbsp vegan butter (earth balance)
  • lemon zest from 1 lemon
  • 2-3 garlic cloves, minced
  • 1 sprinkle red chilly flakes (or more if you like a kick)
  • salt & pepper to taste
  • 1 sprinkle garlic powder (optional)

Directions

  1. Rinse and trim the green beans.
  2. In a large skillet/ pot, cover the green beans with water, add salt (as if you are boiling pasta), and bring to a boil.
  3. When the water has boiled, continue cooking for a couple of minutes, and check one of the green beans to see if it is cooked.
  4. If cooked to your liking (some people like more crunch than others), drain the green beans and add them back to the empty pot, and over medium-high heat, add the butter and garlic and mix.
  5. Sautée for a couple of minutes, mixing to make sure the garlic is evenly distributed and cooked, then add the lemon zest, salt, pepper, chili flakes if using, and mix.
  6. Taste and adjust flavors.
  7. Enjoy!

    Tips & Tricks:

  • You can also add a splash of lemon juice and olive oil at the end! I personally love the taste of olive oil but this is definitely optional.
